  • 1.  Canning Vegetables

    Hello all! I would like some opinions. Am I crazy for contemplating canning veggies and making jellies from our gardens with my older elementary students? I think it sounds like a great idea but I'm curious what others thought as well. If you have a school garden what do you do with the veggies you pick?

    Hi Kristin!

    I think it sounds like a lot of fun! In fact we are going to try it next summer.  I have enlisted the help of our master gardeners program and they have a couple people who hold canning and jelly making workshops for adults and kids.  They are going to come out and show us the ropes.  Maybe see if there are volunteers in your region who could do the same?

    I do all that!  My students love it!  Even my HS boys.  Go for it.

    I think it sounds great!  I am making salsa with stuff from our school garden with our 4th and 5th grade garden club.  

    It's my first year trying it, so there may be a learning curve, but I think it will be great!

    Another option to consider is dehydrating. Fewer food safety issues, less sugar than jams, lol, and it can still be lots of fun. Then everybody can make customized trail mixes or other snacks with the dehydrated foods.   :-)

    We dehydrate kale chips, apple chips, herbs, tomatoes. We made applesauce with an instantpot and food processor, so quick and easy! Put the product in freezer bags to keep until we were ready to use it. We are eating the applesauce and kale chips right now in the garden with our students.
