    I KNEW we were doing the right thing with a summer camp garden when we started teaching the campers how to make refrigerator pickles.  These are kids ages 10 to 15.  

    On the table was a massive bowl of cucumbers, a box of salt, several jugs of vinegar, and assorted spices.  I announced that today we would be making refrigerator pickles.  One of the campers said, "Awesome" Where are the pickles?"  I told him, "you're making them."  "Out of what?", he asked.  "Cucumbers," I said.  TO A PERSON, they all stood there with their mouths hanging open until one camper said "Pickles come from cucumbers? Whoa!" 

    That SAME interaction happens EVERY time we make pickles.
