That sounds like a wonderful idea, Karen! Some great edible flowers to consider are nasturtiums (peppery and great in salads), violets, calendula (adds a lovely color to dishes), borage (beautiful blue flowers with a mild cucumber taste), and chamomile for tea. Lavender, pansies, and marigolds (Tagetes, not African/French types) are also great options.
